Carbohydrate exchanges (CE): what they are, how to count them and a food table
A carbohydrate exchange (CE) is a simple way to measure the carbs in a meal: 1 CE = 10 g of digestible carbs. For people who take mealtime insulin it is the basis of dosing; for everyone else it is the single best habit to pick up, because it shows where excess sugars quietly creep in.

What a carbohydrate exchange is
1 CE equals 10 grams of digestible carbs, that is total carbohydrate minus fibre (fibre does not raise glucose the way the rest does). This lets you convert different foods into a common "currency" and compare their effect on blood sugar.
How to count CE from a label
Take the "carbohydrate" figure from the nutrition table, subtract the fibre, scale it to your portion and divide by 10.
Example: a product has 60 g of carbs and 8 g of fibre per 100 g. Digestible = 52 g per 100 g. If you eat 50 g of the product → 26 g digestible → 2.6 CE.

These are approximate values — the real content depends on the variety, ripeness and how the food is prepared. Treat the table as a starting point, not gospel.
Why count CE
On mealtime insulin, counting CE is essential — the dose depends on the number of CE (the ratio is set by your doctor, because it can differ at different times of day). Without insulin (e.g. type 2 diabetes on oral medication, insulin resistance) you don't need to count to the gram, but a sense of "how many CE this meal holds" helps a lot to keep glucose in check. Common mistakes
Skipping the fibre — counting "total" carbs overstates CE for high-fibre foods (pulses, vegetables). Forgetting about liquids — juice, a sweetened drink or milk are CE too, and often underestimated. Sauces and extras — ketchup, sweet sauces and breading can quietly add carbs.
CE and the fat-protein unit (FPU)
For advanced users, especially insulin-pump users, there is also the FPU (1 FPU = 100 kcal from protein and fat), because large portions of protein and fat affect glucose too — just later. That's a topic to work out with your diabetes team; for basic counting, start with CE.

How many CE should a meal have? It's individual — it depends on your needs, activity level and (on insulin) the ratio agreed with your doctor. There is no single number for everyone.
Do vegetables need counting? Non-starchy vegetables (lettuce, cucumber, tomato, pepper) have so few carbs that they usually aren't counted. Starchy ones (potatoes, sweetcorn, peas) — yes.
Are CE the same as calories? No. CE measures carbs only; calories also include protein and fat. Two meals with the same number of CE can have different calorie counts.
Are fruit counted in CE? Yes — fruit contains sugars, so it counts towards CE. An apple or a pear is about 1 CE; fruit juice packs a lot of them into a small volume.
